Surprise Custard Pie

Sometimes Aunt Pit didn't tell us the exact oven temperatures. Here's a cheat sheet.
Cool oven 250°F
Slow oven 250–350°F
Moderate oven 350–375°F
Hot oven 375–450°F

Orange pastry

1 cup sugar
3 tablespoons flour
4 tablespoons butter, melted
¼ teaspoon salt
3 eggs
2 cups buttermilk
Mix sugar and flour and add egg yolks and buttermilk, then the melted butter. Fold in stiffly beaten egg whites and pour into pan lined with orange pastry. Place in hot oven, 450° F., then reduce heat to 350° F. and bake 45 minutes.

Orange Pastry

1 cup flour
Grated rind of 1 orange
1/3 cup shortening
Orange juice
½ teaspoon salt
Cut fat into flour, add salt and orange rind. Add just enough orange juice to hold ingredients together. Chill. Roll thin and place in a pie tin.

A custard pie is a milk, egg, and sugar mixture baked in a crust. Aunt Pit's recipes are often incomplete, because she assumes everybody knows what to do. If you don't, here's how:

Bake pie shell at 400° for 5 minutes. Set aside.
Combine ingredients and blend well. If the recipe calls for egg whites, beat them separately until they form peaks and fold them into the mixture.
Pour filling into partially baked pie shell.
Bake at 325° for about 50 minutes until an inserted knife comes out clean.
Do not overcook.

 

 

Most of Aunt Pit's recipes came from family and friends, but she clipped many from the newspaper, packages and advertisements.
